Chili Crab with Tomato Sauce and Saw Leaf Herb

Ingredients

  • 6 crabs, wash well
  • 5 saw leaf herb (1 for garnish)
  • 5 fresh chilies, seeded and cut in half
  • 3 tbsp vegetable oil (2 tbsp extra)
  • 5 tomatoes, cut in wedges

Curry Paste

  • 3 onions
  • 2 cloves garlic, peeled and chopped
  • 2 tsp fish sauce
  • 1 tsp ground turmeric
  • 1 cm ginger, peeled and chopped
  • 1 chili powder
  • 1 paprika powder

Directions

  1. Prepare curry paste by grinding or blending all ingredients (curry paste ingredients)
  2. Heat oil and gently sauté curry paste for 3-5 minutes until fragrant, then set aside.
  3. Wash the crabs, pat dry and leave aside.
  4. Heat 2 tbsp of the oil and sauté the chili, tomato and saw leaf herb over high heat for 1 minute, stirring constantly. Add the curry paste and fry for 2 minutes, stirring frequently. Adding some water and crabs. Stirring until curry paste and crab mix well. Cook until water dried out, then serve garnished with saw leaf herb.
