ၾကက္ဟင္းခါးသီးေၾကာ္ (Fried Bitter Gourd)

ၾကက္ဟင္းခါးသီးရဲ႕ အခါဟာ ေဆးဖက္၀င္ပါတယ္။ ဆီးခ်ိဳေရာဂါသည္ေတြအတြက္ အလြန္သံုး၀င္ပါ တယ္။ ဆံပင္မျဖဴေအာင္ ကာကြယ္ေပးတယ္လုိ႔ လဲဆုိပါတယ္။ မ်ားမ်ားစားရင္ေတာ့ အေၾကာတက္ ပါတယ္တဲ့။ ၾကက္ဟင္းခါးသီးဆားေရစိမ္ထားတာကို ညွစ္ခ်ျပီး ေသာက္ရင္ ဆီးခ်ဳပ္၀မး္ခ်ဳပ္ျခင္းကိုလဲ ကာကြယ္ပါတယ္။ အခုကေတာ့ ဒီေဆးဘက္၀င္ၾကက္ဟင္းခါးသီးကို ေၾကာ္ျပီး စားမွာပါ။

၁။ ၾကက္ဟင္းခါးသီးကို အလ်ားလိုက္ခြဲ၍ အေစ့ထုတ္ထားလုိက္ပါ။ ဆားနယ္ျပီး မိနစ္ (၂၀) ခန့္ထားထားပါ။ ျပီးရင္ အခါးရည္ထြက္သြားေအာင္ညွစ္ေပးပါ။ တခ်ိဳ႔က ခဏျပဳတ္လုိက္ျပီးမွ ညွစ္ပါတယ္။ ၄င္းေနာက္ ပါးပါးလွီးပါ။

၂။ ၾကက္သြန္နီ၊ ၾကက္သြန္ျဖဴကို မညက္တညက္ေထာင္းကာ ဆႏြင္းနဲ႔ ဆီသတ္ေပးပါ။ၾကက္သြန္ ကြ်တ္လာရင္ ၾကက္ဟင္းခါးသီးထဲကို ဆား၊ ငပိကို ေရေဖ်ာ္ျပီး ထပ္ဆက္လွိမ့္ေပးပါ။ မီးမွ်င္မွ်င္နဲ႔ခ်က္ ျပီး ေရခမ္းလာရင္ ခ်လို႔ရပါျပီ။ ၾကက္ဟင္းခါးသီးက နာနာေၾကာ္ႏုိင္ေလ အေရာင္ေျပာင္းေလ စားေကာင္းေလ ျဖစ္ပါတယ္။

The taste of bitter gourd has benefits for health which is also useful for people with Diabetes due to its amazing bitterness. With little side effects as stiffness of the neck if over-eaten, it prevents the mess for grey hair.

If bitter gourd soaked in salt water is squeezed and the liquid produced is generously consumed, you will feel constipation-free and a lowered blood sugar level. Now, let me fry this healthy meal of bitter gourd for you.

Bitter Gourd – 1 whole piece

Onion – 1 whole piece

Garlic – 2 bulbs

Turmeric Salt – 1/2 of a teaspoon

Pounded Fish (Nga Pi) – 1/3 of a teaspoon After cutting the bitter gourd along its length, you can remove the seeds.

Mix it up with a pinch of salt and leave it for at least 20 minutes. Then, squeeze the prepared Bitter gourd to remove all of its bitterness. Some people boil before removing the taste to make it more tender. And then, slice it into thin pieces.

Pound the onion and garlic just enough to lose their shapes and put them into heated oil with turmeric. As soon as they become crispy, put the bitter gourd pieces together with a mixture of salt and Ngapi and water.

Curry on with the heat set on just a slight temperature. The good thing about this dish is the more you fry it, the better it’ll taste or smell even.
