Lemon Butter Sesame Wrapped Salmon

Ingredients

  • 180g Salmon Fillet, Skinned & Boneless
  • 100g Potato, peeled & roughly chopped
  • 80g Asparagus, peeled & cut into cubes
  • 80g Zucchini, cut in 2 inches finger shape
  • 5 Cloves Garlic, roughly chopped
  • 2 tbsp Sesame seed
  • 1 Lemon, collect it’s  juice
  • 80ml Cooking Cream
  • 150g Unsalted Butter, cut in small cube
  • 80 ml Skim Milk
  • ½ Clove  Onion, peeled and chopped
  • 1 Bay Leave
  • 50 ml White Wine
  • 1 tsp Capers
  • ½ tsp Salt
  • ½ tsp Crushed Black Pepper
  • ½ tsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • 1 tsp Parmesan Cheese Powder
  • 100g Broccoli  

Directions 

  1. Marinate the Salmon Fillet with ½ tsp Lemon Juice, ½ tsp Cajun powder, a pinch of Salt and Crushed Black Pepper, then  wrapped with 2 tbsp of Sesame Seeds and put a side for 15 minutes
  2. Boil the chopped Potato until tender and mush, then put on medium heat and mix well with 80ml of Skim Milk, 25g of Unsalted Butter, a pinch of Salt & Pepper to taste and cook until smooth and finish with Parmesan Cheese Powder.
  3. Blenched the Asparagus, Broccoli and Zucchini, then sauté with 25g Unsalted Butter, a dash of Olive Oil and a pinch of Salt and Crushed pepper to taste .
  4. Pan fried the Marinated & wrapped Sesame Salmon Fillet over medium heat until brown on both side, make sure not to burn sesame coatings.
  5. In the sauce pot, put chopped onion, bay leave, Lemon Juice and white wine bring to boil and reduce, then add Cooking Cream when White Wine get half amount to reduce, cook until Cream thicken and keep away from heat, and slowly add in 100g of Unsalted Butter until melt, a pinch of Salt & pepper to taste.
  6. Strain the sauce and put some Capers to serve, presentation as Main Course with sauté Vegetables, Mashed Potato and pan fried Sesame Wrapped Salmon Fillet with Lemon Butter sauce.
