Spaghetti with Clams and Aromatic Herbs

The balance of the aromatic herbs with clams is just the perfect match healthy comfort pasta for anytime of a day to enjoy.

Ingredients:

  • Spaghetti 250 g
  • Cherries tomatoes 400 g
  • Red capsicum 1 small (seeded and cut small dices)
  • Green capsicum 1 small (seeded and cut small dices)
  • Yellow capsicum 1 small (seeded and cut small dices)
  • Fresh Basil 2 tbsp (chopped some and leave some whole for garnish)
  • Fresh Parsley 1 tsp (chopped roughly)
  • Fresh Oregano 1 tbsp (chopped roughly)
  • Salt ¾ tsp
  • Black pepper ½ tsp (freshly ground)
  • Lemon zest 2 tsp (grated)
  • Garlic 4 cloves (mince)
  • White wine ½ cut (or lemon juice)
  • Olive oil 2 tbsp
  • Green Chili 3 whole (cut half)
  • Clams 750 g
  • Lemon 1 small (cut small slice for garnish)

Preparation

  1. 1. Cook pasta according to package directions, and drain well.
  2. 2. In a small bowl mix chop herbs and lemon zest.
  3. 3. Heat a large skillet over medium-high heat. Add olive oil to pan; swirl to make sure coat the pan well. Add garlic, capsicums, chili, and sauté for 4 minutes. Add wine and clams, cover and simmer 4-5 minutes or until shells open.
  4. 4. Combine clam mixture to pasta, salt, black pepper in a large bowl, toss well. Sprinkle with herbs mixture and tossing well.
  5. 5. Nicely place pasta mix on serving dish and enjoy with a glass of your favorite wine or fresh juice.
