သခ်ၤာေကာ္ျပန္႔ (ဂဏန္းသားေကာ္ျပန္႔စိမ္း) (Spring Rolls)

 ေဂၚဖီ၊ ဥနီ၊ စိမ္းစားဥ၊ ၾကက္သြန္ၿမိတ္ စတာေတြကို ေသးေသးေလးမ်ားျဖစ္ေအာင္ ဓါးခုတ္ေပါက္ထားေပးပါ။ ဒယ္တစ္ခုထဲမွာ ဂဏန္းအသားမ်ားကို င႐ုတ္ေကာင္း၊ ဆား စတာေတြႏွင့္နယ္ကာ အသီးအရြက္စံု၊ ပဲပင္ေပါက္တို႔ႏွင့္ ေရအနည္းငယ္ျဖင့္ လွိမ့္ေပးေနပါ။ အရြက္မ်ားႏူးၿပီး အရည္ခန္းလာရင္ မီးပိတ္ထားေပးပါ။ ေကာ္ျပန္႔ရြက္ေလးမ်ားကို အ၀တ္စံုတစ္ခုျဖင့္သုတ္ၿပီး အလယ္မွာ အသီးအႏွံမ်ားပံုကာ လိပ္ေပးပါ။ ေရေႏြး ေငြ႕ေငြ႕ေပးၿပီး ပူေအာင္ ေပါင္းထားႏုိင္သလို စားခါနီးမွ ေကာ္ျပန္႔ကို Microwave မွာ 30 စကၠန္႔ခန္႔ အပူေပးၿပီး ေဆာ့စ္ႏွင့္ စားႏုိင္ပါၿပီ။ ေကာ္ျပန္႔ရြတ္မ်ားကို City Mart frozen ေကာင္တာမွာ၀ယ္ယူရရိွႏိုင္ပါတယ္။

Spring rolls are one of my all-time favourite feeds. Back in London, I used to feel blue for I miss the taste of the spring rolls. When I got back here, it felt as good as meeting the long-departed relatives, to eat what I’ve been missing all these years. Those who sell the rolls often regard this crab cuisine as “Thin Char Crab”. Being made mainly from vegetables without oil involved, these rolls are perfect for our health. Let’s take a look!

Ingredients (for 30 rolls)

-       Crab flesh                    20 KyatThar

-       Tuber of Sein Sar U    15 KyatThar

-       Cabbage                       30 Kyat Thar

-       Carrot                          10 Kyat Thar

-       Bean Sprouts              10 Kyat Thar

-       Leek                            5 stalks

-       Salt                              As needed

-       Pepper                                    As needed

-       Rice Paper                   30 sheets

Dice the cabbage, carrot, tuber and leek into tiny pieces.  Mix the crab flesh with pepper and salt in a wok.  Put the diced vegetables and bean sprouts to heat it with little water. When the vegetable starts to wilt and the water is boiled off, turn off the stove.

Wet the rice paper with a piece of cloth. Then place the heated vegetables with crab flesh in the middle and start rolling them.

The rolls can be steamed with vapour until they become hot or they can be microwaved for 30 seconds before serving, and eaten with sauce.
