Tropical Green Salad

Ingredients

  • 1 Avocado, cut into half & seeded, peeled
  • 1 Green Apple, unpeeled & cut into cubes
  • 1 Green Mango, peeled & cut into cubes
  • 200g Honey Dew Mellon, peeled & cut into cubes
  • 100g Green Grapes, cut half & seeded
  • 4 Kiwi Fruits, peeled & cut into cubes
  • 10 Pitted Green Olive, wash and drain
  • 100g Walnut, half crushed
  • 1 Lime, collect it’s juice
  • 5 tbsp Olive oil
  • 1 tsp Each of Salt & Crushed Black Pepper
  • 100g Shredded Parmesan Cheese
  • 20g Fresh Mint Leaves, wash & soak in iced water
  • 100g Rocket Salad (or) Ice Berg Lettuce, cut Julian & soak in iced water
  • 50g fresh Basil Leaves, pit only leaves and wash well
  • 50g Cashew nut, roasted (or) pan fried
  • 3 Cloves Garlic, peeled
  • 3 sliced of Baguette, spread with Pesto and toast

 Directions

  1. Cuts all fruits, Pitted Green Olive and Rocket Salad soak in iced water expect Avocado & Kiwi.
  2. Blend 2 Kiwi Fruits and mix together with juice of ½ lime, 2 tbsp of Olive oil, a pinch of Salt & Crushed Black Pepper to taste.
  3. And also blend the Fresh Basil Leaves, Cashew nut, Peeled Garlic, 3 tbsp of Olive oil, 50g of shredded Parmesan Cheese to make Pesto and spread on 3 slices of Baguette then toast.
  4. Drain the fruits, Mint Leaves and Rocket Salad from iced water and mix gently with Kiwi Lime Olive Dressing then put on top with sliced Avocado & roasted Walnut.
  5. Garnish with Shredded Parmesan Cheese, a pinch of Crushed Black Pepper, and then serve with Pesto Bread.
