Whetta Ahchin Chet

Ingredients

  • 500 g pork loin fine marmorized
  • 1 tbsp Fish Sauce
  • 3 tbsp Peanut Oil
  • 20 no small Shallots
  • 4 clove Garlic crushed
  • 1 cm peeled fresh Ginger crushed
  • 1 stick Lemmon Grass, crush the root part
  • 3 dry red bell chili, soaked in water and minced in blender
  • 2 tbsp peeled young Mango, shredded
  • 0,5 tsp Iodized  Salt
  • 400 ml (1,4 cup) Water

 

How to Cook

  • Cut the pork in 2 cm cubes marinate in fish sauce, ginger, lemon grass for 20 minutes. Heat up the oil and sauté` onion and garlic for some minutes to golden color.
  • Add Pork, ginger and lemon grass as well the chili paste and stir well, than add the mango. Cover and cook at low heat for 15 minutes than add the water and simmer for another 30 minutes.
  • Season with salt to taste.

 

How to serve

  • Serve as family style in a bowl or individual on a plate with brown rice aside or at same plate.
  • If the Mango is to ripe you will have a more soft taste, if you choose the younger Mango the shape will stay better and it will add more flavor to the dish.
